Winter Italian Vegetables



1 packaged whole-wheat pasta
2 cups water
3 stalks celery, washed and chopped
1 cup broccoli florets, washed
1 cup cauliflower florets, washed
2 small zucchini, washed and sliced
1 small onion, diced
1 (8 ounce) can tomato sauce
2 teaspoons Italian seasoning

  1. Cook pasta according to directions on package. Drain.
  2. Put 1 cup hot water in a saucepan.
  3. Add vegetables and cook for 5 minutes.
  4. Add tomato sauce, remaining cup of water, and low-sodium Italian seasoning.
  5. Simmer until heated through.
  6. Serve with cooked pasta.
  7. Refrigerate leftovers.
