Veggie Bean Wrap



2 bell peppers, washed and chopped 
1 small onion, peeled and chopped
1 (15 ounce) can low-sodium black beans, drained and rinsed
2 mangos, washed and chopped
Juice of one lime
½ cup cilantro, washed and chopped
1 avocado, washed and diced
4 whole wheat or corn tortillas

  1. In a pan, cook bell peppers and onion for 5 minutes, add beans and stir well.
  2. In a small bowl combine mangos, lime juice, cilantro, and avocado. Save ½ half mixture for topping. 
  3. Fill tortillas with ¼ of the bean mixture and ¼ of the mango mixture
  4. Roll up tortillas to make wraps and top veggie bean wraps with remaining mango mixture.
