Vegetable Lentil Soup



1 cup dried lentils
5 cups water
2 Tablespoons vegetable oil
¼ onion, finely chopped
1 cup canned tomato sauce
½ teaspoon garlic powder
1 teaspoon salt
¼ teaspoon black pepper
1 teaspoon dried Italian seasoning
1 celery stalk, washed and chopped
1 carrot, washed and sliced
2 Tablespoons vinegar

  1. Place lentils in a large pot, and add water.
  2. Bring to a boil and add all ingredients except vinegar.
  3. Reduce heat and cover.
  4. Cook on low heat for 1 hour.
  5. Stir in vinegar.
