Spinach Squares

Ingredients: 

Vegetable oil spray
1 cup flour
1 cup low-fat or nonfat milk
1 teaspoon baking powder
2 eggs, beaten
½ teaspoon salt
½ package frozen spinach, thawed and drained
1 cup low-fat cheddar cheese, grated
1 onion, diced




Directions: 
  1. Preheat oven to 350 degrees.
  2. Spray 9 x 12 pan or one of similar size with vegetable oil spray.
  3. Mix together next 5 ingredients flour, milk, baking powder, eggs, and salt.
  4. Add spinach, cheese, and onion and mix in last 3 ingredients mix well.
  5. Pour mixture into pan.
  6. Bake for 30 minutes, until lightly browned. Cool slightly.
  7. Cut into 9 squares.
