South of the Border Salad

Ingredients: 

Dressing Ingredients
3 tablespoons vegetable oil
¼ cup lime or lemon juice
½ teaspoon pepper
1 teaspoon ground cumin (optional)
 

Salad Ingredients
2 (15.2 ounces) cans corn, rinsed and drained
2 (15.5 ounces) cans black beans, rinsed and drained
1 (14.5 ounces) can diced tomatoes with green chilies
1 small onion, chopped




Directions: 
  1. Mix the salad ingredients in a large bowl.
  2. Mix the dressing ingredients in a small bowl.
  3. Pour dressing over corn mixture and mix well.
  4. Cover and refrigerate for at least 2 hours.
