Soil Salad



1 (15 ounce) can kidney beans, rinsed and drained
1 cup cooked brown rice
¼ teaspoon salt
2 carrots, washed, peeled, and shredded
½ (15 ounce) can corn, drained
½ pint-sized container cherry tomatoes, washed and cut in half
½ green pepper, washed and chopped
¼ cup tex-mex vinaigrette dressing (store bought or homemade)
½ cup low-fat cheese, shredded

  1. Place beans, rice and vegetables in a large bowl.
  2. Add dressing.
  3. Mix thoroughly.
  4. Top with cheese.
