Rootin' Tootin' Ribbon Salad



2 large carrots, washed and peeled
1 large beet, washed and peeled
1/4 cup raisins
1/2 cup vanilla low-fat yogurt
Cinnamon (optional)

  1. Wash fresh veggies.
  2. Using a vegetable peeler, shave the carrots and the beets to make long ribbons.
  3. In a large bowl, mix the vegetable ribbons, raisins, yogurt, and cinnamon to taste.
  4. Refrigerate leftover salad.

Note:  Enjoy as a healthy snack or veggie side dish for lunch or dinner.
