Roasted Root Vegetables with Maple Glaze



3 carrots, washed, peeled, and sliced
3 beets, washed, peeled, and cubed
1 Tablespoon vegetable oil
¼ teaspoon salt
½ teaspoon pepper
Cooking oil spray
2 Tablespoons maple syrup

  1. Preheat oven to 450 degrees F.
  2. Mix vegetables, oil, salt, and pepper in a large bowl.
  3. Coat a large baking dish with cooking oil spray.
  4. Add vegetables to baking dish.
  5. Bake for 20 minutes.
  6. Stir in maple syrup or honey.
  7. Bake an additional 20 minutes or until vegetables are soft.
