Rainbow Salad

Ingredients: 

1/2 box whole grain pasta, cooked
1/2 cup reduced-fat salad dressing 
Choose fruits or vegetables from three or more different colors to equal 3 cups of veggies. Some suggestions are listed below:

Red Yellow/Orange Green Purple
Red Pepper Yellow or Orange Pepper Lettuce Purple cabbage
Tomato Squash Spinach Beets
Strawberry  Carrot Broccoli Eggplant (uncooked)
Apple Cantaloupe Green Pepper Blueberries
Raspberry Mango Pear  

 




Directions: 
  1. Place pasta in large bowl.
  2. Choose at least one fruit or vegetable from each list to add to the salad.
  3. Add reduced-fat dressing.
  4. Mix and serve.
