Macaroni and Cheese



1 box whole wheat pasta
1 (16 ounce) package of frozen, chopped, broccoli
1 Tablespoon butter
2 Tablespoons flour
2 cups low-fat or non fat milk
2 cups mild cheddar cheese, shredded

  1. In a large pot, cook pasta, following the directions on the package.
  2. Add frozen broccoli to the same pot with the pasta to cook at the same time.   
  3. Drain the pasta and broccoli and return to the pan.
  4. In a separate pan, melt butter over medium heat and mix in flour, stirring with a fork or whisk until smooth.
  5. Add milk to butter and flour mixture a little at a time, stirring until smooth after each addition.
  6. Stir cheese into milk mixture, continuing to heat over medium heat. Stir until cheese is melted.
  7. Once cheese is melted, pour over cooked pasta and broccoli.
