Lasagna Roll Ups

Ingredients: 

½ package of whole grain lasagna noodles (10 pieces)
2 cups tomato sauce
1 can tomato paste
1 garlic clove, chopped
1 teaspoon Italian seasoning
2 cups fresh spinach, washed
2 Tablespoons parmesan cheese, grated
1 cup low-fat, cottage cheese
1 cup low fat mozzarella cheese, grated




Directions: 
  1. Boil noodles, drain and set aside.
  2. Mix tomato sauce, tomato paste, spinach, and spices to make sauce.
  3. Combine cheeses.
  4. Lay noodles out flat one at a time.
  5. Spread each boiled lasagna noodle with cheese mixture along the full length, and then roll it up.
  6. Turn it on its end and place in a baking pan or casserole, sides touching.
  7. Pour sauce over rolled up noodles in baking pan.
