Black Bean and Corn Salsa

Ingredients: 

1/3 red bell pepper washed and chopped
2 Tablespoons olive oil
1 small red onion, finely chopped
2 cloves garlic, chopped
1 large tomato, washed and chopped
1 stalk celery, washed and chopped
3 Tablespoons chopped fresh basil
Lime juice
2 ears fresh corn (or 1 ½ cups frozen corn)
2 cans (15 ounce each) black beans, rinsed and drained
Salt
Freshly ground pepper
½ teaspoon chili powder
½ teaspoon ground cumin




Directions: 
  1. Husk corn
  2. Combine all ingredients in a bowl.
  3. Stir, cover, and chill.
