Bean Tacos

Ingredients: 

2 cans of beans (15 oz each)
1 Tablespoon of olive oil
½ onion, finely chopped
1 clove garlic, chopped or minced
6 corn tortillas
6 Tablespoons of low-fat sour cream or low-fat plain yogurt
½ cup of low-fat shredded mozzarella cheese




Directions: 
  1. In a skillet, heat the olive oil, chopped garlic, and chopped onion.
  2. Sauté ingredients for a few minutes until the garlic is slightly brown.
  3. Drain and rinse the can of beans and add to the pan. Mash the beans into the oil, garlic, and onion.
  4. Mix the ingredients in the skillet.
  5. Warm-up the corn tortillas.
  6. Spoon the beans onto the warm corn tortillas, add some shredded mozzarella cheese and one teaspoon of low-fat sour cream.
