Baked Apples and Sweet Potatoes

Ingredients:
3 apples, washed
5 sweet potatoes, washed
Vegetable oil spray
1 15-ounce can of pineapple chunks, packed in 100% juice
1/3 cup brown sugar
Directions:
- In large pot, cook potatoes in water until tender.
- Drain potatoes, cool, peel, and cut into thick slices.
- Peel apples and slice.
- Preheat oven to 325 degrees.
- Spray a large baking dish with vegetable oil spray.
- Layer sweet potatoes, apples, pineapple, and brown sugar in baking pan.
- Cover with foil.
- Bake for 45 minutes.
