Parmesan Tomatoes

Makes 4 servings, 2 tomato halves each

Ingredients

vegetable cooking spray
4 medium ripe tomatoes cut in half crosswise
¼ cup reduced fat Italian dressing
½ cup grated low-moisture part-skim mozzarella cheese
2 tablespoons grated parmesan cheese
2 teaspoons basil
2 teaspoons oregano

Directions

  1. Preheat oven to 350°. 
  2. Spray baking pan with vegetable cooking spray
  3. Place tomatoes, cut-side up, in pan. 
  4. Pour the dressing evenly over the tomatoes.
  5. Sprinkle cheeses evenly over tomatoes.
  6. Bake for 10-12 minutes or until cheeses are melted and bottoms of tomatoes are browned. 
  7. Sprinkle with herbs just before serving.
