vegetable cooking spray
1 medium onion, chopped
3 cups cooked brown instant rice
1 can (15 ounces) diced tomatoes
1 can (15 ounces) black beans, rinsed and drained
4 large green peppers
1 cup grated low-moisture part-skim mozzarella cheese
½ cup water
Directions
Preheat oven to 350°.
Spray a 9x13 pan or pan of similar size with vegetable cooking spray.
In a large bowl, mix rice, onion, tomatoes and beans. Set aside.
Wash peppers well. Cut tops off peppers remove seeds from inside.
Pour ½ cup water in the pan.
Fill peppers with rice mixture and place in pan.
Sprinkle shredded cheese on the pepper tops.
Bake for 30-40 minutes or until peppers are tender.
Tip
Brown rice is high in fiber and a healthy choice. If you do not have brown rice you can use white rice instead.
