vegetable oil spray
1 cup flour
1 cup low fat or nonfat milk
1 teaspoon baking powder
2 eggs, beaten
½ teaspoon salt
½ bag frozen spinach, thawed and drained
1 cup grated low fat cheddar cheese
1 onion, diced
Recipe
Preheat oven to 350°.
Spray 9” x 12” pan or one of similar size with vegetable cooking spray.
Mix together first 6 ingredients.
Add and mix in last 3 ingredients.
Pour mixture into pan.
Bake for 30 minutes, until lightly browned. Cool slightly.
Cut into squares for desired serving size.
Tip
Pack dinner leftovers in small containers for an easy and inexpensive lunch.
